Green Immunity Juice

This eye-opening smoothie is a great way to start your day!

Leafy greens provide a boost of vitamins, minerals and healing phytonutrients, and a vegetable serving! Fresh ginger is a natural anti-microbial, helping to boost your immune system. Apples and pears are the base fruit as they are lower in fructose (naturally occurring fruit sugars).

You can be creative with your smoothie by adding additional fruit, lemon zest, herbs and seeds. Fresh or frozen mango or blueberries can be added for additional sweetness and nuts or seeds will add protein and richness to this smoothie.

1 apple, cored and cut into 1-2 inch pieces

1 small pear, cored and cut into 1-2 inch pieces

1 lemon, juiced

1 piece of ginger root, peeled and roughly chopped (approx. 1 square inch or more to taste)

1 to 2 cups water

3 to 4 kale leaves or 1 to 2 handfuls fresh spinach leaves

Optional additions to try (not limited to list as possibilities are endless)

2-3 mint or basil leaves 

1/4 cup mango or blueberries

1/8 cup raw cashews 

1/8 cup seeds (hemp, chia or pumpkin seeds)

Place the apples, pears, lemon juice, ginger, and water and any additions into the blender, blend until smooth. Add the greens and blend until smooth, at least two minutes with a regular blender; less if using a high-powered blender such as a Vitamix. Taste the smoothie to determine if it needs more greens, fruit, lemon, or water.
